Real Minor League Stadiums require licensing fees.
And tons of modeling and rendering time that I'm sure most of us would rather have the dev team spending on gameplay.

In RTTS I played at Shippet recently as the away team but I can’t remember who we were playing against. I’ll see if I can figure it out later.

Could just do a random exhibition with each minor team as the home team and see what stadium is selected since it always has their home stadium selected first.

In RTTS for Tripple A it's the Rainers (Seattles affiliate) that play at Shippett Stadium and Buffalo Bisons (Toronto's affiliate)
For Double A it's the Fisher Cats (Toronto)
