Has anyone else noticed that when playing vs CPU their Ace is always on the mound? Or is this only when you choose your Ace?

It is random SP when you do play vs. CPU, when playing conquest it will match the rotation slot you choose.

Yep correct.
Just keep in mind in Conquest if you have the same rating for your 4th and 5th pitcher (say 82 overall) it goes by the slot the pitcher is in your rotation. So if you want to use the one in your 4th spot swap him to your 5th spot and that gives you an easier pitcher to face against the CPU in most cases.
