Does anyone know if the rosters will be updated with all the free agency stuff going on before launch? And will the new rules changes be in this year's game or no?

Unfortunately we won't know until the game drops. Unless they mention it in the DD stream.

Rosters are typically locked 36 hours before release. Freeman/Chapman et al won’t be on the disc roster, but they should be in the initial Live Roster download.
