Quick question on the digital deluxe edition and PS4/PS5 dual entitlement - if I start playing 21 on PS4 and later switch over to PS5 does my progress follow me to the new platform?

Yes it should. It's tied to your PS+ information, and your local save files need to migrate for your offline stuff.

I have yet to see a PS5 in the wild.
