Don't waste your time with the 89 all star griffey. You can earn the 99 from his program even if you have 0 stars towards it. If you do the conquest map, moments and the games against the signature series teams that are in his program you can earn him in a couple of afternoons

It looks like you already have some of the good cards from moments. I would also suggest the signature teams moments if you can handle playing all those CPU games. There are some solid cards in there too if you're just starting out.
As far as QS value cards, most of the Finest around that price range are decent. I've had success with and would recommend Kris Bryant, Josh Bell, Yordan Alvarez, Jeff McNeil, and Matthew Boyd.
For QS value Signatures, I would recommend Freddie Freeman, Keith Hernandez (if you prefer contact/defense), Kerry Wood, Steve Finley and Ozzie Smith. Matt Carpenter is a little higher around the 6K range, but has a good swing.

My question is that I see most of the Finest are around 5500-6000. Is it financially feasable to buy them for around 6K and then take a 1K loss per player once I QS them? Yes, I get Yates, Realmuto, and Cole. But I'm making my CAP a catcher, so until I build him up; Realmuto would be a bench bat.

Your CAP Catcher will NEVER give you the attributes that either Realmuto, Pudge, Piazza or even Garver, Santiango & McCann will. They ruined the CAP in 18 & 19 that you can no longer max out attributes to 125 each. Mostly because they want you to use thier cards which is how they make money with stub exchange & tax charged each time 1 sells a card.

If you are just starting out, look to make use of the quick sell diamonds before rushing to cash them in. The 5000 stubs will always be there for you. Plenty of value can be had in grinding Moments for players like Adam Wainwright, Wade Davis, and potentially Juan Marichal (if you do well with junk ballers).
Since you will likely continue to grind out moments, set up your 4 lineups to maximize value. Lineup 1 H2H, Lineup 2 Grinding, Lineup 3 is all Left Handed Hitters, and Lineup 4 is all right handed hitters.
Often you will find in moments that you will play games against a specific pitcher. For example, when playing versus the AL East Signature Team in a 6 inning game, the CPU will keep Cy Young (RHP) in unless the CPU is down in the 5th inning. Get him out of the game by playing a lineup of left handed bats and you may eventually see gold LHP Brett Cecil coming out of the pen. Now insert the right handed bats stashed on your bench.

The CAP is fun to build especially since you can choose your favorite swing, but at this point in the game there are better cards out there available cheaply (and CAPs aren’t fully free, since to get around 99 stats across the board for them you’ll need to equip Diamond equipment, some of which still isn’t cheap). Earlier in the year the CAP catcher was about as good as it got unless you unlocked 99 Pudge. But now, I’d say just buy Finest Realmuto or so, and spend your time grinding to unlock Griffey, or on Signature Teams, or Conquest since many of the maps are loaded with free or hidden packs, and you’re bound to get lucky in some of those packs.
