Will this game ever be good again? Why can't we just play how we want?

You get right to the heart of the matter. SDS leadership is dominated by a control freak nature. They want more money after the sale and believe iron tight control over how the game is played somehow puts more money in their pockets.
But, I think instead it costs SDS sales. This is why since 2018 the lid has been firmly closed on sales reports of MLB The Show. If it was good news, then SDS would have issued press releases to their favorite media to trumpet their achievement. In business, no news is bad news!
SDS has but one mission each year -- to deposit their required annual payment to Sony through Sony Interactive Entertainment. If they meet that annual requirement, then all's good. If they fail, then Sony steps in and makes wholesale changes in leadership.
My guess is that SDS is finding it increasingly difficult to realize that annual contribution to Sony to stay afloat and are cutting staff to the bone to lower costs to try to keep pace with diminished sales.

@SaveFarris_PSN They can add your diamond dynasty as they have. But why does what we've played for 30 years get taken away? I guess if you need constant rewards to play, you're not much of a baseball guy. Maybe try slots at the casino? You can get your constant rewards and we could get our game back. The logic for a constant carrot sucks. Here, we'll let you use the players you want for the last month of the season. Gee, thanks. Again, try slots you'll love em! Big bright lights, loud noises, and jackpots. Serious dopamine!

Option B is the right answer, and people who would complain that way need to get a life. You are correct, some will come here and complain. Games versus the CPU should be tailorable per the desires of the customer. The only game mode that should have rule limits is online competition, and that's for the purpose of an even set of rules to play by.
What SDS seems to miss is the offline concept versus the online competition concept. In their mind, they treat every game mode like it has to follow the same hard rules present in online competition.

@dinkus_MLBTS I’m convinced it’s just gonna be the same game every year.. It’s just a lame H2H card game now and that’s all they focus on. They put no effort into anything else. Same graphics, gear, commentary , minor league stadiums, etc. oh yeah we got ambush hitting!!!

That's what I've been trying for. Still have the same thoughts on the franchise and those need to be expressed, but I've done what I can to change my approach and drop certain talking points. Easier said than done when discussions get derailed purposefully. A zebra can change their stripes, though I was never a bad person to begin with.

That's an insulting response by you Joe! This discussion has remained on track. You may not like the track, but it never veered off it.
If SDS wants to control the message, then abandon the concept of a customer forum. Just put out press releases of your own choice and words and let the chips fall where they may. But, you don't get to think nor speak for us, and you are firmly not in a position to tell us as a customer base what we think of the issues with the game.
