Getting a different PS5 today. Don't want to delete my account off the current PS5 until I see if this 'new' console works.
Does anyone know if I can sign into the 'new' PS5, with my current ID, BEFORE I delete it off my current console?

Yes, but unfortunately once you play a few games on the new console you will be permanently locked out on the old one. You'll have to bin it.

Are you sure? I have my account on more than one PS5 and have been able to play on both of them interchangeably. It may help that one is in Michigan and the other is in California, and I've never played on both at the same time (wouldn't that be a feat?).

My brother and I have our ps5s a room apart and both our profiles are on both and nothing has ever been messed up.
