I just pulled a Dimond Elly De la cruz which is sitting around 30k right now. And Francisco Lindor sitting around 55 to 60k. Should I sell them now, or will they go up in value?!

It all depends on how they perform once the season starts.
I doubt that hey go up in value before the season starts. Once the season starts it all depends on the players performance. Elly is an 85. If he has a lousy start he could be downgraded to an 84 gold making his price go down. Lindor is an 88 so he would need a several really bad roster updates to fall too far.
