Do these actually do anything? I know the new outlier one is a good one for pitchers. Any others that actually do anything? Should I be paying attention to these? Is there anywhere that how these affect game play?

Clutch or pressure cooker or whatever works for sure. IIRC Ramone has said on stream it gives a 2% boost to the player stats. Most of the others are just highlights of high stats (e.g. if he throws 98mph he gets the cheese quirk, but it doesnt actually make his fastball more effective.)
