How do options work? Help...

If I want to sign a guy to a 2 year deal with an option for a 3rd year, do I sign him to 3 years and select option? The reason I ask is because I have tried to sign a one year deal with an option, but if you only sign to one year, you can't select an option.

The last year of contract is the option year as we can't currently choose which years are options
