I know there's two different controllers. The dual shock edge and the standard controller from PS5 does either one make a massive difference in gameplay or feel for the game

I don't believe it makes much of a difference.
You can have greater control of the stick sensitivity with the more expensive one, but not much beyond that.
Zazzi28 did a great video on this one YT a couple of years ago.
