Do the stats for the players change over time in this mode? I am not completely sure if they do but I don't really see it. But I feel it might make this mode a bit more interesting if they got some adjustments, up or down, over time.

Yes they do. You'll notice it more from the players called up or traded for. trade for Eloy Jimenez and get 3 pluses, you can see him go up to 87 or higher from 79. But your regular teammates go up slower, so a 79 might become an 80-82 by the end of the season.

Attributes can change for the live cards in several ways. The first is an adjustment by the team based on recent performance. These are done in batches every few weeks. I think there is only one more scheduled to happen before the season ends.

Inside edge. These are daily adjustments based on conditions on a given day. For example if a hitter rakes against a pitcher he is scheduled to face that day he will get a boost to his hitting stats just for that day.

Oh and one more, they supercharge cards based on noteworthy performances. Pujols live card is boosted because he hit his 700th HR. Meanwhile Kolten Wong was boosted for hitting 3 HRs in a single game.
