If I started playing on Xbox and decide to switch to ps5 how would I go about transferring my data to ps5.

You don’t transfer your data because it’s held on the server, not your console. You link your PS account to your XBOX account making sure your XBOX account is your master account. Your copy of the game on your PS5 will then sync your play with what you do (or have done) on your XBOX. You will be able to play on both consoles and cross-progress.
