I'm a Yankees fan. I would happily start Jeter everyday at shortstop. 5x silver slugger, 5x gold glove (much maligned... I know), 14x all-star, most hits all-time by a SS.

1961 Frank Robinson MVPOk, since neither Sabo card would be all that much fun, how about 1994 AS Paul O'Neil. Of course that would be a Yankees card, so I'll take a 1991 BO Paul O'Neil card too.

I'd dump every stub I've ever had into a Perfect Game Halladay Card, or Cy Young Halladay card. He's currently my CAP pitcher.
As a Jays fan, I have two other fun ones:
Jose Bautista 54 dinger season card
Marco Estrada card from his unreal season- I know both those cards were in 17, but I didn't play back then. Would be great to have them as retiree cards.
as a fun one, a retro Muni Kawasaki walkoff card would be fun and glitchy to play with

It’s to bad you didn’t play then, Jose Bautista is my CAP right now but it’s not the same without the 7th inning bat flip animation. His card is my all time favourite. Estrada however never got any love in this game, not even when his op batting average was along side Prime Kershaw for over a year.
