Don't try and toggle the attributes while you are in the DD menu, it won't give you the option.
But if he's in your squad, during a game, you'll be able to toggle his attributes and see his pitching attributes.

Lol yes you can bring him to pitch. Just did. Use him as a pinch hitter for your pitcher. Just don't replace him after you make the 3rd out.

Two-way players can only come in to pitch if you are up or down by six runs or more. This thread was a fail. Nothing new or groundbreaking.
