Is there a way my friends and I and do a fantasy draft then customize the rosters for our online leagues?

No. You can use a site like ESPN to run a live series draft.

Legends would need to be done via discord or other vehicle.

It's not that difficult to use something outside of the SDS world.

If you are using custom leagues, you leave it wide open for all cards and let people fill in their teams...
