Mantle helps you get Trout. It's not really an either or situation, you can use both.
To answer your question OP I still use Biggio as my catcher, Sheffs off the bench. I have all 3 prestiged.

I like Biggio, Sheffield is barely hanging on a bench job & mantle is awesome, so is trout for that matter.

Mantle is a lock for pretty much everyone. I'm still using Sheffield as well.
Sheffields issue is his defense. There are so many OF options that he becomes expendable there. Depending on who your 3B is, you might have better options than him.
Biggio is the most expendable. There have been a few really good 2B available (HRD Cano, Hornsby) that make him less useful and I use a CAP at catcher so his secondary position isnt that big of a boon (except for events). They also just released awards Piazza too which will further lessen his value.
I dont even have Biggio on the bench right now. Awards Cruz and Frank Thomas are my righty bench bats...plus prestige Chipper hits better from the right side. Other 2 spots go to lefties.

Go for the live series collection. Mantle is and will probably always remain the best card in the game. Him being a switch hitter with all of his attributes is tough to beat. Biggio is a great utility guy and Sheffield is good. The nice thing is completing the live series collection will get you a nice chunk of players to use toward trout, plus they are all no sell so it will save you some stubs that way. When 99 Griffey comes out I think I’ll end up platooning trout and walker, mainly based on who I am more comfortable swinging with at the time, but mantle is never gonna leave the lineup.

All 3 are incredible. What else are you going to do?
Get mantle, then work towards Trout. Then you've beat the game.
