Replaying the map will not give you any extra rewards. The only exception is to re-do the USA map any take every territory. That will give you the bundle of packs....but that's it.

The Cardinals one was challenging for sure--6 hits, 2 XBH in two games. Took me an hour or so and numerous attempts. I eventually got to where I would quit if I didn't get 3 hits in the first game. I used power swing in early innings to try and get a quick XBH, but then normal swing later on. Sometimes I did nothing but power swing, but that didn't work out too well.
When I finally accomplished it, I ended up getting lucky and going 6-7 in a high-scoring first game, and then power-swinging in the first AB of the second game for a double to get the mission.
SF wasn't as bad, but it isn't easy either. Cueto's changeup resulted in lots of weak grounders to third.

That's crazy! I just did Eck's as my third choice. His are a bit annoying, but I thought the Bob Gibson ones were rougher! And I haven't finished all of Corbin's either! Good luck!

Yes, his delivery is glitched. It's similar to the glitched delivery of Michael Fulmer a few years ago. I imagine it will get patched soon if enough Bug Reports are submitted.
