How would I do that exactly?

I think I understand, so do the profiles before I begin the new franchise? Because in the current franchise I am just doing some fun with, I do have the CPU roster control turned off but it doesn't allow me to actually control the other teams even though I am only controlling one team.

Ok I am considering doing a season for all 30 teams in franchise mode. This is only to keep until the trade deadline and then I will just sim out the rest of the season. After that I want to fire myself as the GM for 28 teams and just keep with 2. Is that possible or would I be stuck having to control all 30 teams?
