You must not watch much actual baseball. Players get hits off balls out of the zone with pretty substantial regularity.
I actually find it harder to hit a ball outside of the zone with Zone hitting than it seems to be in real life.

I don't understand why they keep ruining the game a week after the game releases. For the first few days/week it feels like they hit the sweet spot to where hitting/pitch speeds should be, then they release a patch that reverts to the same old broken experience.
I get that hitting is a game of guess work, but there should be some level of see the ball/hit the ball. Not every pitch inside should be squirted the other way and timing shouldn't mainly range between Late-Very Late.
It's been my feeling for a while now that they should either slightly reduce all pitch speeds across the board or (my preference) slightly increase swing speeds to represent ACTUAL bat speeds of MLB players. Preferably have it be a player unique attribute. Because let's face it, not all players bat speeds are created equal.
