Once you gain a two-way status, you keep it for the following two seasons.
So, you would have to not pitch him for the next couple years and then (I would assume) he would lose the status and go back to just a RF.
At least this would be how it would work IRL. In game .... ?
EDIT: Thinking about this, I don't see how you could accomplish this unless you play every single game. He is going to be automatically included in your rotation/bullpen. The CPU will undoubtedly use him at some point.

@stinkymcpooter_xbl I do play every game. I was able to retire super early after selling my small accounting business during COVID to a bigger accounting firm.
They have a ton of pitching and now that he’s 31 in game I thought to move him into my replacement for Tucker. I might try it and see. Thanks for the insight. I thought someone might have done it.
