Why is hitting so variable?

Can anyone explain why one moment I'm crushing every pitch and then the next I can't hit a [censored] thing? Not only that, but in some games, I'm hitting the ball if not perfect perfect, pretty much on the nose and it's just one out after another. Any tips on how to avoid this yo-yo type of hitting skills?
