I’m thinking you won’t be able to pick a different stadium as this particular mode seeks to mimic the fields you would be playing if you were a true up and coming prospect with the ultimate goal of the major leagues. You’ll be limited to whichever fields you would be actually playing on during your teams schedule.
In other modes you can though such as DD and exhibition

You can choose your home ballparks in the upper right hand corner of the main RTTS locker room screen

I was messing around with this earlier and saw that if you tab over to the tv screen in the clubhouse which is the League screen there’s a selection there called Stadium Assignment which allows you to change the home stadiums where your team plays. Looks like you can choose from any of minor league and major league stadiums
