How much content will i miss

I will be away from my xbox for almost the entire month of August and will miss the second cycle of set 3 ranked season and some event. Think i can bounce back when i come back? I have one set 3 collection reward

You will just have to grind all the Topps Now, July POTM, and then buy a few things and should be just fine.
All that should still be active so just time consuming.

You'll be fine. I took over a Month off (all of season 2) and I've already caught up. I even had time to go back and get enough done to unlock 99 randy in set 2 collections.

It's not the jail time that gets you. It's the lawyers fee and the court surcharges. Buddy blew over, and it cost him 13k plus he had to rent a state breathalyzer and carry it with him everywhere for 2 years. That was 300/month.

If you'll have cell or wifi access, you could flip on the market a bit over the course of that month and pick up a lot of the cards you would have missed out on otherwise. You would just have to grind the non-sellable cards when you get back.
You could also try playing via Xcloud, but the lag in a game like this can be brutal.

You really need to get your priorities straight. If you could go eight years without seeing your family you should be able to postpone until the game cycle ends.
