So currently for example Giancarlo Stanton is an 83 playing up to an 87. If someone like that continued to play up to a diamond, how long would it be until their new rating was a diamond instead of a gold?

Inside edge is based on their historical performance/splits and to a certain extent recent trends and how well the live series player will do that day. It doesn't mean that they will get upgraded during the live series update.

What the other poster stated about IE.
Roster attribute updates are supposed to be based on a 3yr average.

they do the 3 year average for players ratings. I would think that he is close to goin diamond but you have to consider the yank's have so many diamonds as it is
