Personally I wouldn't want the first one and for the second I think quirks are enough, anything more would turn into a spam fest of whatever your batter is lowest rated against.
Stats/attributes i would like to see are for the stealing attribute be changed to Jump or something like that which represents how good of a jump a player gets. They could make it kind of tiered like fielding as far as 90+ there is a best jump and worst jump you can get, the worst jump someone with that rating could get is still a good jump compared to what someone with a low rating would get if that makes sense.
Also not necessarily an attribute but something they could just put on the player card like the "player tendencies" would be bat speed.

I'd like to see a versatility attribute to offset the 5% penalty for utility players who play all over the field. It seems like the secondary position penalty is antiquated with so most players who don't have a true primary position.

I wouldn't mind if attributes were expanded upon a little more. Could have a pickoff attribute for pitchers. Could have forehand/backhand/throw on the run attributes for infielders. The Jump attribute that OP had is a solid idea.

The one I really want to see is a “scooping” attribute. Or it could just be tied into fielding. A yellow throw should should have the opportunity to be “scooped” if the first baseman is good enough. I’m sick of getting green throws and seeing the ball bounce and the 1B always catches it. That’s not always automatic. If you make a yellow throw it should be on the first baseman to bail you out just like IRL instead of it being random as it is. Some yellow throws are good, some are errors - randomly.

But, for 1: I do agree that only the elite defenders should be making those plays.

I want pitch framing for catchers. Also I think vs RH and vs LH attributes for pitchers could possibly be implemented.

Framing makes sense for variable strike zone. Much better than it just being random as it is now. That said, I think they’d face serious backlash if variable strike zones were in online modes like RS and BR.
From a realism standpoint, I like having variable strike zone and umpires that have different tendencies. I can certainly understand why people would be fiercely against this tho. I thought it was kind of fun in custom leagues. Even tho some of the ball and strike calls were beyond laughable. Like Eric Gregg type badness.
