There should be different stats based on the injury chance of a player and how many games they can play in a row, it definitely feels off and there are some players who play almost every game all season and others who just get injured easily.

I’ve noticed that especially for players like, Trout, Arenado, Altuve...the stars who normally play 160+ games a year, but it seems like every player gets “tired” every like 7-10 games

A rare example is when Trea Turner played all 162 games. Can't do it in The Show. Not even close.
