Just try different pitchers until you find 5 you like.

Try the Yamamoto WS MVP card. I struck out 25 with him in a Conquest game, although it was only on Veteran. I know that's not online, but still. Maybe try 'Spooky' Senga.
Try using NLDS Sasaki as an opener. With 52 stamina, he could give you 5 innings + -

I'm still trying to get around Skubal getting rocked online.
Is he getting rocked lefty/lefty? With his pitch mix, I'm sure it's a case of not using a pitcher correctly. -
Skubal's pitches are very flat and his change-up hangs a lot even on a perfect pinpoint. His outlier doesn't feel like outlier. Also, the pinpoint meter is extremely fast in the clutch so it's easy to mess up.

Below HoF you probably want outlier 4sm or outlier snk.
HoF and especially higher is when Al Leiter, Greg Maddux, and other high control pitchers with 5-pitch mixes become super useful.

I don't have extreme clemens cause I'm not doing that. Burnes and Gibson I've gotten kind've rocked with. Skubal from the stretch has the fast windup which makes pinpoint tricky.
I used Paige once in weekend classic and he was pretty dominant in the one start
