Can't d o anything right

Apparently no matter what I do to correct a bad swing or anything in this game for that matter doesn't seem to help at all. For example I'll swing at a pitch and be too early so same pitch same speed I'll swing a little bit later just barely a little bit later and then I'll be very late. And vice versa. If Ever I am allowed to hit the ball it goes straight to a defensive player for an easy out. My opponent on the other hand knocks them into the gap or over the fence every time. What gives?

Saw a YouTube video from Adam Samuels, hit a ball good timing and the ball touching the center dot on the PCI it was like 98mph and 44° launch …the game is random

Try different approaches.
If your opponent is spamming low in the zone place your pci low and wait for a hanger and come up on it .
If he's spamming up in the zone place the pci high. Try to be a little late and above the ball. That usually gets me a oppo base hit .
If he's all over the place , zone in on where you feel most confident. -
I wish you best of luck in finding your right approach. I personally stick to Franchise and smoke the CPU every game. On beginner difficulty with my sliders all the way up, and the CPU all the way down. Just how I do every sports game.

I've had the same problem while doing the moonshot event. I've lost probably a dozen in a row, and one was an absolute blowout. They scored more than 20 runs on me in 3 innings.
I'm just trying to get 3 homers with Rooker and I can't even get one. I'll keep trying but may have to go back to USA map for a bit to keep me sane.
