Someone please explain this hitting variance

Notice that some online players have players with really high averages compared to many others, and my own, and when I play those teams pitching is like banging my head against a wall. Is this because they are using directional or timing hitting instead of zone?

Why don't you try out directional or timing and give us the results. Some people are just really good with zone

No. It's because you're playing all star against good players and good players rake on all star
