Here is a good review of someone who played last year on both systems. In short, here is the most important point he makes...FYI:
"After multiple games using the same roster, same opposing pitcher, same stadium, same HDMI cable, and same monitor input for both consoles,I kept getting the same results: Early on 4FB/SNK using XSX, Late on 4FB/SNK using PS5.
I decided to dig deeper into my monitor settings and noticed when using my PS5, the refresh rate was 60Hz (expected). However, when I use my XSX, the refresh rate shows AMD FreeSync Premium active (both 1080p and 1440p).
To this point, PS5 still has not added support for VRR (pathetic by the way, Xbox One X had it day one all the way back in November 2017), but I eagerly await the day they finally do add support. Once they do, I am curious to see if my 4FB/SNK timing improves, but until then I'm going to be playing most/all of my RS games on XSX."

I’ll allow it. But at the moment SDS is catering to your 10 year old console over the people like me that forked out the money for the next-gen.
There’s always money in the banana stand. Issue for me (and I’m sure many others here) certainly has just been availability of the new system. I’d have no issues upgrading if I could get it.
For the time being though, we’re at least joined in our contempt for Xbox!!!
My contempt is with SDS for not allowing PS5 to be on the same playing field as Xbox. But I’m giving them some time to fix it before I jump ship from Sony.

When you say "input lag" are you referring to the time it takes for your display to react to your input buttons from your controller.... or are you referring to "response time" as in the time it takes for your display to render a moving image?

Looks like Madden is still capped at 60 fps, but VRR is working. But id frame rate is capped VRR is pretty useless because you are using V-Sync

TV's have both input lag and response time. My LG CX has a response time of .3ms (even faster than monitors), yet the input lag is 5.9ms for 4k@120 and 10.9ms for 4k@60 . The response time of the monitor is how fast the pizels can change, and is near instant on an OLED, as only each individual pixel affected has to change, not everything. Input lag in this instance is the time it takes the console to send the information to the monitor so that the monitor/TV can process and draw the image. The response time to draw it is instant at .3ms , yet it still takes time for the information of what to draw goes from the console to the TV/monitor. That time from the console to TV is the input lag I am talking about.

I remember reading a tech article that even recommended using a shorter HDMI cable to help reduce input lag... noting that a 3 ft. cable can shave off milliseconds off of your input lag vs a 6 ft cable... LOLDepends on the quality of the cable. A shorter cable that is made poorly, won't be faster than a longer cable that is built to spec. Crimps in the cable, etc, can also affect the input lag.
However, yes, in theory a shorter cable should help, as it is less distance for the electrical signal to travel. However, the difference would really be splitting hairs at that point. Theoretically, yes, a shorter cable should be faster, yet not sure we can notice that small of a difference. A 5ms drop is noticeable, yet not sure .6ms I would be able to tell (however, maybe.....maybe....possibly, yet I'll take my 5ms input lag drop due to 120hz .... over a shorter cable .6ms )

Coincidentally, last last year I found a different issue late last year ......that was able to significantly reduce my input lag. Not sure how much, but it was significant as well. Anyway, ever since I found that and a fix, I can hit insane. I'm hitting over .370 online in Ranked (up to 800 right now) .... and have 65 homers with Trout after just 3 weeks. This is different than the 120hz issue....and has made a big difference for me as well.

I can confirm (I have pictures and video), that 4k@120 works on an Xbox Series X while playing the game online.

Wow, thanks for this super informative post. Would it be better to have my settings at 1440p at 120hz or 1080p at 120hz? I heard MLB doesn't even support 1440p and the only options past 1080p is 4K (which I don't have).

PS5 doesn't support 1440p , so 1080p and 4k are your only options. PS4 used to support 1440p. Can't remember if the Xbox supports 1440 or not off the top of my head (I think it does), yet the input lag for the CX is less at 4k than 1440 if I remember correctly. I think you might be stuck at 1080p if your are on a PS5.

Will this keep games at PS4 only though? I would imagine PS5 would still be included in crossplay but I very well could be wrong. At this point I am not too consumed by it. It will be interesting if it is implemented to see how big any advantage will be.
