I didn't want to make a new post so I'll just ask here...for guys that have the game already, are you allowed to choose how many innings to play in Spring Training?...like how in RL they played a few 7 innings games.

Yes they are. but be careful the replace player screen comes at start but its to replace player on 2nd ,ive already taken Aaron out for PR thinking i was selecting a PH for my pitcher

Yeah, that’s not good. Replaced Yermin Mercedes by accident, was stuck with a bronze backup C rest of the game. Almost got caught a few moments other times. If you want to PR, you should do it manually, not with an auto-prompt.
