How does everyone rank the 7 cards you can choose between in the diamond variety packs?

Its going to depend on three things: Each cards attributes, how often you can get one of these packs via the XP Reward Path, and whether or not they're selling for alot of stubs right off the bat.
If it's the latter, I'll pick the two that are selling for the most stubs and then rebuy later.

Same strategy as last year: open up all my other packs first and figure out where the hole in my lineup is.

I just can't turn down Mantle so he's definitely one I'm taking. I'm not sure if I have the pre-order version that will get me 2 picks...so def taking Mantle.

Mantle for 100% positive. Until MM was announced I wanted Sheffield, but I may go with one of the pitchers, depending on prices maybe, was going to just sell the 2nd.

Going to wait and see on prices and other diamonds I may get easily early (affinity, pack luck, CAP, etc). Right now, I would go with Mantle and Mo though.

Almost certainly Greg Maddux, but the second card might be Sheffield or Mantle. I guess it really depends on what I need at the time
Maddux will be great vs CPU, I can't wait to hear how he fares vs real life players.

Depends. How much stubs are these going for the first week? And how much after the market settles?
