The game might not support it this year, but it will eventually. Getting HDMI 2.1 right now makes sense as it makes sure that the TV/monitor can last through the whole lifecycle of the new consoles until they do a console refresh in 4-5 years that has HDMI 2.2/3/4 .... whatever the HDMI standard is then for 8k@120 or 4k@240 or 4k@360. Also for Xbox users Microsoft is up-scaling to 120fps.

Microsoft is upscaling at the OS level.
There might be a few TV's that support HDMI 2.1 right now, but only one that I found is faster than a gaming monitor, which means there was only one TV for me.
When playing for performance you want to play lower then the max scale of your hardware not max it out.
