If you aren't that concerned with the create a stadium and probably better graphics/fps of the PS5 version, you can still use the PS4 version on a PS5, you likely just won't have all the extra features that are in the PS5 version. Just get the standard and if you can score a PS5 somewhat soon you can still use that version for your playstyle on the new console.
If you really want the create a stadium feature as you mentioned, then you could just buy the version that gives you both entitlements so you don't have to buy the PS5 version later in the year. (even if just on sale, it will likely be at least $25 to upgrade unless you find a decent sale when you get the PS5 version.)
Personally, I'd just buy the Jackie version now, and if you have to sell something to cover that price difference I'd just do that instead of waiting until later in the year to buy the game again.
