If you look into the game log when playing online they actually tell you what hitting and pitching difficulty you are playing on. It was a mystery before the Game 11 update.

Wasn't it Always on All-Star up until level 700 or so ? And always All star in BR ?

Yeah but if you play someone above 700 when you are in the 600's you will be on HOF difficulty.
I got destroyed the other day and come to find out the game was on Legend. I didn't know until the game was over. Now I can check before the game starts.

Are you talking about when it states 'Legend' right before the name of the stadium?
If so, I don't think that's the difficulty level. That's the legend of the game (listing of where it was played, time of day, etc).

I meant in the game log when you are in the pause menu. Scroll down and you will see the pitching and hitting difficulty.

Nope, didn't have it when the game loaded up. That's why I was shocked to see my opponent was rated 950 after the game ended. Thanks.

Right where you are referring to, it now says pitching difficulty... right under that.
