So... why is it actually called “dashboarding”? I know what it is... just don’t know where the term came from.

I'm not sure if that term really applies to Playstation, but the UI for Xbox is called the dashboard. Since that is where you end up when you quit, I assume that is where the term originated.

It absolutely comes from original Xbox.

Some games back in the day like original gears of war which I played religiously had no way to quit. So when people started losing they would dashboard because that was the only way to leave a game. It def came from xbox.
