I just completed the Trent Grisham moment (3 XBH in 1 game) by doing the following:

1. Switched to Directional batting and Strike Zone 2 view.

2. Before the pitch, point the left analog stick up and to the opposite field (like towards the 2 or 10 on a clock) and power swing (just be patient and wait for a good pitch, before swinging).
