So obviously MVP, Cy young, and ROY are from those years. How to they determine the attributes for things like signatures and prime?

Signature is their whole career and prime im guessing they take their best 3 year run and use that but that one I am less sure about.

This is accurate.
I believe for sig they take the best /9s or contact from any year and balance them all together.
This makes awards cards designated for ljke outlier years (Think Mike Scott) and Sigs are for people with long great careers
