If I exchange a player who is worth 100,000 exchange points for a 50K exchange, will it complete 2 exchanges, or just one? If one, why even have those players there?

It will complete exactly 1 exchange, and it's the same exchange rates as last year, when there were 100k exchanges(if memory serves me)

Wouldn't shock me if exchanges go up to 100k for the next ta series
