Take pitches against the bosses and mini bosses. They do not replace the pitchers. the more pitches they throw it wears them out making them walk you a lot or throw meat balls. Its ok to get two strikes on you because it breaks them down.

You get XP and some stars. Dont forget to turn the setting to "arcade" makes it easier. Also after you complete the HR derby you have to close out of the app and then start the app on the dashboard. Once you do that you will get your XP and stars.
