Can i play on one account linked and jump from console to console or do i start over on DD if i get this for the xbox?

I don't understand your question and want to add to @dantheranman_XBL answer.

If you link your account between your PS and an Xbox; you can play on withe console.However, you CANT play against yourself.
So, say you have an Xbox at your girlfriend's house and a PS at your house. You can Playstation when you're home and continue from where you left off on the X Box when you're at your girlfriend's house.
But if you want to match up both accounts so you can just abuse stats you can't do that.

You also need a copy of the game for each console (it is on game pass). When you link accounts, be careful which account you make primary. Your target primary account is the one that holds all of your progress. If you choose the wrong account as primary, your progress will be at the beginning until you unlink and link correctly to your account that has your progress. Also, your game settings do not carry over. You will need to set your game settings in each console (ie hitting, pitching styles, etc.)

Ok thank you guys, it was more to get another system in a different location I could access occasionally and I didn't want to buy two ps5, would rather have 1 xbox 1 ps5.

Yep, just buy the game on each system and link the accounts. I do this and it works well.
