Newbie question: Platoons

How do you guys work a platoon, say Helton/Thomas, in RS if you don’t know who the pitcher will be that you’re facing?

Start the lefty since most pitchers are right handed. If a lefty is in the mound pinch hit for their first at bat. This is the only way to platoon.
I'm a bigger fan of using someone with reverse splits (for instance Thames) or someone with incredible stats against both sides (Gehrig, Babe, Musial) than platooning.
It's certainly a viable option though. Just be sure your bench is set up 2 lefty, 2 righty, and platoon player.

This is a great summary.
What you could also do is construct your line up in a way that you'll always have balance and in some spots a platoon advantage. Like never putting 2 righties or 2 lefties after each other. You could also sandwich a platoon hitter in between 2 switch hitters. In that case the balance will always remain when you decide to platoon. Me personally I always like to have clusters of 3; one lefty, one righty and a switch hitter. Be creative with some guys who have reverse splits.
This way you will always have a matchup advantage in at least 2 out of 3 at bats per inning.
