How is it that games function so differently from one year to the next?

I come from an era with commodore 64, Nintendo, Sega, SNES and games in a series rarely functioned differently year to year. They would add a feature but rarely did it seem like the game behaved completely different year to year. Yes, I know that we're talking about a gaming system as powerful as a kitten but the point still stands.

I play madden and MLB. That's it. Both games, it seems, functions so differently from year to year. MLB is a little more subtle but it feels like the last 3 iterations of the game have been made by different developers. Madden is the same way. Coverage, blocking, etc plays differently from year to year.

I get that there would be a noticable difference over an 8 year period (say 2010 to 2018) for a game to function differently but on a year to year basis? Seems strange.

Add in patches and slider adjustments and things are just wild lol

Since I only play madden and mlb, do other games function this way as well?
