Why in my collections does it say I’ve collected 20 players yet only have 16-19 players? Then if I want to buy them back they’re going for extreme amount of stubs.

Because there was a roster update, so some players got moved to FA, while some FA got moved to teams.
Also, the expensive players are usually players that were just added to DD. The price will drop eventually.
Since you’ve already completed the Collect 20 goal, it doesn’t go back down.
