The highest I've ever seen is 116 on several occasions from the 88 Ian Happ card.

In the first video, Hoskins smacks a ball 116 mph at 11.92 degrees. It bangs off the top of the fence and narrowly misses a home run.
I searched all the balls hit in the Statcast that were at least 116 miles per hour and between 11 and 12 degrees. There have been nine such instances -- 4 singles, 2 doubles, and 3 outs. Here's a Ketel Marte swing from August 2019 that was nearly identical to the one in your video (even similar directionally).
The ball falls several feet in front of the fielder. There are other factors in how LA/EV factor into distance but I'm starting to think the numbers they show us in the game are a bit of a facade.

Very interesting, thank you for the info. I’ve often wondered that too; my guess would have been that the numbers are correct because it’s all maths and maths is never wrong. Based on my hypothesis below, I still believe the numbers are correct.
Perhaps the maths is correct but it doesn’t necessarily purely determine the visual result. What I mean by that is that the calculation would have determined that ‘home run = true’ (in the Cespedes video) and the resulting visual path of the ball would follow a set path (eg choose from 5 or so line drive homer animations to left), rather than be a perfect match with the calculated trajectory.
With the Hoskins clip, the only thing I can think of is that perhaps it was an inside pitch? I got no idea. Probably the influence of MTO difficulty (HoF) if it was MTO (fairly certain it was) and ‘it’s a video game not a boring simulation‘.
Also how do we search statcast? I didn’t even know that was a thing! Oh the possibilities!

Baseball Savant is the greatest website ever created (if you're a baseball nerd like me). It has so much information with so many tools to sort it/visualize it, and they're updating it all the time.
There's a main group of preset leaderboards with all the season averages for general statcast things. I linked to the exit velocity and launch angle metrics, but you can click the drop down to see leaderboards for sprint speed, fielding, pitch movement, etc.
One thing included in the drop down is a custom leaderboard, where you can select between dozens of different statistical categories and make your own leaderboard. Here's a pretty standard one I would use..
The most useful feature is the query function, which allows you to look up just about anything. For instance, here's a link to all the fastballs thrown on the outside part of the plate that were hit for home runs against the Cardinals in 2019 sorted by exit velocity. If you scroll down you'll see Fernando Tatis came in first with a 110 mile per hour bomb off Michael Wacha. If you hover over his name and click, a drop down will open with a bit more information. All the way on the right of that drop down is a link to the video (every pitch from the 2018 and 2019 seasons are available to watch on that website). The search feature can be a bit confusing because it's a bit less intuitive than the rest of the site. But with a bit of playing around it's very fun and interesting.
Plus there are player profile pages that include an incredible amount of information, too.
It took me a while to figure out a lot of this stuff. I would just start clicking around and looking at things that you find interesting.
